The honest answer for most couples is that the ceremony and the registration are two separate things — and separating them is normal, not a compromise.

Only a civil ceremony at a French mairie is legally binding, and one partner must have lived in that commune for at least 30 continuous days before the banns are published. For couples flying in, that residency rule is the whole story — it is why almost no destination wedding in France is a legal one.
The overwhelming norm is to complete the legal marriage at home — a registry office appointment, often weeks earlier and with two witnesses — and to hold the ceremony that matters at the château or bastide. Your celebrant can run a full ceremony with vows, readings and rings.
A French church will not marry you until the civil marriage exists. If a religious ceremony in France matters to you, raise it with the venue early — it changes the running order and sometimes the dates available.
Because the French ceremony is symbolic, the legal marriage is governed entirely by where you registered it. Confirm with your own registrar that the arrangement is what you think it is.
